Who Am I?

Born and raised in the Rockford area I graduated from Harlem High School in 1998. After spending a few years fixing and repairing computers and their networks I decided to go back to college to get a bachelors in Computer Science. During my first semester at Rock Valley College I hooked up with the local InterVarsity chapter. At various times I served as a small group leader, did basic chapter administrative work, organized large group meetings, and started something called Atom Groups. Then, after earning my associates degree at RVC, I transferred to NIU to complete my Computer Science degree. I also served as a small group leader at NIU for InterVarsity for one year and helped with some administrative stuff for a semester. Now, I volunteer at many different InterVarsity retreats in my spare time. After college I worked at FleetSoft for almost three and a half years as a developer and now I work for Experity as a senior software engineer

Candied Bacon Recipe - 07/27/2014
I've made this now for my church picnic and for a family get together. Since I've received requests for the recipe at both events I decided to write it up. While there are a ton of recipes online this is mine:

1 Cup maple syrup
1 Tbsp of ground cinnamon
2 Tbsp of Old Hickory Seasoning
5 Ounces of brown sugar
24 oz package of thick cut bacon.
1 Basting brush.
1 Cookie tray
1 Wire Pan Grate that will fit in the cookie tray.
Tin foil
1 pair of tongs.

  1. Preheat the oven to 400 degress. While preheating do steps 2 - 8.
  2. I prefer to nuke the maple syrup for 30 seconds as it seems to make it easier to mix it with the ingrediants.
  3. Mix the maple syrup, cinnamon, Old Hickory seasoning and brown sugar into a glaze. Mix well.
  4. Take the bacon out of the package and cut it in half. This will allow you to cook more at once.
  5. Put a sheet of tin foil on the cookie tray. This will help with clean up later.
  6. Place the the grate on the cookie tray.
  7. Arrange as much bacon on the grate as you can.
  8. Baste the glaze on the top side of the bacon. Don't worry about the other side. We will do that later.
  9. Once the oven is preheated to 400 degress, cook for 15 minutes.
  10. After cooking for 15 minutes, pull the tray out and flip the bacon using the tongs.
  11. Baste the second side and cook for another 6 minutes.
  12. After cooking for an additional 6 minutes, pull the bacon out onto plates. Put the plates in the freezer for 2-3 minutes. This stiffens them up so you can put them in a pyrex container. A good spatula might help get the bacon off the plate.
  13. Repeat numbers 7 through 12 until all your bacon is cooked.

You can serve it hot if you like. Step 12 is for if you need to take it somewhere.
